If you have been following my blog for any length, especially since the beginning of the year, you know that I have recently discovered that a majority of my health issues in my life have come from wheat and corn intolerance.
There have been several learning curves and discoveries along the way, including trying to find something I can eat when I am in a "snacky" mood.
Believe it or not, wheat and/or corn is in at least 98% of store-bought items. And I have discovered the hard way, that even if it is from a health food store, that doesn't mean it works for my body. You really don't want to know how I have discovered this tidbit.
One thing I have missed is tortilla chips and salsa. That has been a staple snack around our home for years and is just the thing when you are craving something a little salty and some veggies.
Recently, we made two discoveries that have rocked my world....well, in the food area!
One is this yummy Kimchi booth we found at our local Grower's Market:
Kimchi is typically pickled cabbage and is the national dish of Korea. This gal at Grower's Market makes a radish kimchi that will knock your socks off! It is SO good! It even makes me want to try Kimchi made out of cabbage. Not only does this gal have a booth selling this product but she is a Believer and uses it as an outreach!
So we discovered the Kimchi, which was wonderful but how was I going to eat it? Well, a day or two later, Peter discovered these WONDERFUL Veggie Chips that even I can eat!!!!
They are literally just plantain, parsnip, cassava, purple sweet potato, orange sweet potato, beetroot, sunflower oil, and sea salt. That's it. No weird vegetable oils that may or may not have corn oil. No wheat flours. Just veggies. They. Are. Amazing.
So....here is how I eat my Kimchi:
Let me tell you....it's amazing!
I'm pretty sure both of these items will change Taco Night for me! Instead of tortilla chips, I can have veggie chips and if I need some heat, add some kimchi!
